Thank you, thank you, thank you! We are not fans of ricotta cheese, so we just left it out and used extra mozzarella. We loved it! Loved the spicy flavors and cheesy goodness. I think beef broth would be great in this soup. It would definitely change up the flavor, but I think it would be good. Please let me know if you try it! I made this and it rocked!! I did zucchini instead Of kale and next time I will add mushrooms.
